Broccoli Bites

Most my recipes are from another source but I have then modified them to fit a No Sugar No Grain (NSNG) eating style.  I originally found this post via pinterest on http://www.staceysnacksonline.com/2011/01/broccoli-bites-for-kids.html.

Broccoli Bites are good for breakfast, lunch or dinner.  They make a solid snack choice and they are even good cold as leftovers! Also, it's only three ingredients!

Time: 35-40 Minutes
Makes: ~8 "Bites"

Ingredients
2 cups of fresh broccoli (you can also use frozen stuff, but why not use the real thing?)
1 1/2 cup of grated cheddar cheese
3 eggs
Salt and Pepper to season

Equipment (aka Things you will need to wash...)
Medium Mixing Bowl
Baking Sheet
Parchment Paper
Spoon(s)
Spatula

Method

  1. Pre-Heat Oven to 375 F
  2. Line the baking sheet with parchment paper
  3. Mix all three ingredients together (If you are feeling adventurous, feel free to use your hands!)
  4. Add as much salt and pepper as you want
  5. Make small patties with the mixture and place them on the parchment paper
  6. Bake for 15 minutes
  7. Turn the patties
  8. Bake for another 10-15 minutes until eggs are set to your liking
  9. Serve and Devour!
